Mediterranean Baked Fish 🍽️
📋 Ingredients:
Four white fish fillets (e.g., cod, tilapia, or snapper)
Two tablespoons of olive oil
Three garlic cloves, minced
One cup cherry tomato, halved
1/2 cup Kalamata olives, sliced
One-half red onion, thinly sliced
1/4 cup fresh parsley, chopped
One teaspoon dried oregano
1/2 teaspoon paprika
Juice of one lemon
Zest of one lemon
Salt and pepper, to taste
👩🍳 Directions:
One️ Prepare the Oven and Baking Dish:
Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with olive oil.
Two️ Season the Fish:
Pat the fish fillets dry with paper towels and arrange them in the prepared baking dish.
Season both sides of the fillets with salt and pepper.
Three️ Make the Marinade:
In a small bowl, combine olive oil, minced garlic, oregano, paprika, lemon zest, and lemon juice.
Mix well and drizzle the marinade evenly over the fish fillets.
Four️ Add Vegetables:
Scatter the halved cherry tomatoes, sliced Kalamata olives, and red onion around the fish in the baking dish.
Five️ Bake the Fish:
Bake in the preheated oven for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.
Six️ Garnish and Serve:
Sprinkle fresh parsley over the baked fish before serving.
Serve hot with crusty bread, steamed rice, or roasted vegetables for a completely Mediterranean-inspired meal.
💡 Tips:
Swap Kalamata olives for capers if you prefer a tangy twist.
Add a sprinkle of feta cheese before baking for extra creaminess.
Pair with a simple arugula salad drizzled with olive oil and lemon juice.
