Welcome to Monday!
We all have a purpose in life, and at some point, we will want to aim for something greater than we are currently at.
Something bigger than ourselves!
But most people usually dismiss such a significant adjustment since it means going beyond our human contrivances.
Settling within our comfort zone may cause more damage than benefit in the long run,
When Dan and I discuss how to challenge oneself by embracing even bigger commitments, stretching ourselves past our limits, and allowing ourselves to grow more than we can imagine.
If twelve years ago, yes, it’s been twelve years ago when we took the leap of faith and went outside our comfort zone for treatment in Mexico.
And if I did not commit to changing my lifestyle, I may not be here today blogging.
This website of our journey would not be here to inspire others on what type of treatments go beyond a conventional physician’s cope.
So, today - MAKE A REAL COMMITMENT
Don’t look back.
Take small steps every day.
Find an accountability partner.

Be open to following that passion right down a rabbit hole with no constraints.

One way we clear our minds is to explore time in nature.
There is this area we love going to, which we like taking our guests that visit us; EXPLORE PARK.
It’s a camp area along this river, just the sound of the water going through the creeks; give us a piece of purpose.
There is this area with different buildings that has been there since 1800’s civil war time, that sometimes we find deer there.
Every time I walk along the houses, I imagine my footsteps walking in their footsteps.
Since it’s May, Dan and I thought it would be fun to share what is it about May that’s so significant during this month?

This goes out to all my Canadian friends, it’s a day to celebrate all the wonderful things that make Canada, Canada.
Its World Turtle Day.
Dan and I love this day, for we are very lucky to be part of Heckles life.
I guess he has taught us the wisdom that the little things are important, and perseverance for he continues to push himself until he is able to finish the task.
This day honors two animals associated with wisdom and perseverance, turtles and tortoises.
Time is precious and is priceless, so Dan and I will continue each day to pull from a box of 365 inspirational quotes; one quote and share with you.

CHAPTER 15; TOUCH WITH WORDS
DON’T FIGHT THEIR BATTLES-
The urge to explain, to defend, to support, regardless of the behavior, is urgent when you are connected or feel responsible.
Don’t do it, unless the balance is terribly one-sided, as in the protection of children.
Those who have little ability to discern the wrong or truth of the situation need guidance, so they are not overcome by it.
Other situations demand your help, but to help means taking your ego out of the picture.
Your help will probably not be appreciated.
Their denial, their refusal to accept your help, and their deep need may cause them to lash out at you more strongly than ever.
Regardless you do what you must do, including such things as spending more time with them, limiting their driving and talking honestly about the problem.
You may need to call the physicians who are giving out the medication for support in limiting the pills.
Do what you can.

THE PERFECT CUP OF FRENCH PRESS COFFEE
You might be wondering how French press coffee is different from other methods.
The French press method has no paper filter that traps the finest particles and also some of the oils from the roasted bean.
It produces a fuller cup, with accentuated body than other filtering methods.
It is also important to grind the coffee correctly.
The ground coffee is steeping in very hot water and particle size will have an effect on how much extraction happens.
If to fine, over extraction will draw out the woody flavor of the beans.
Too coarse will under extract the flavor and lessen the depth of the flavor and body in the cup.
A suggestion; using a good burr grinder to grind your coffee.
The reason why, because it will achieve relatively uniform pieces that are large enough to brew with this method.
An advice; set the grinder to a coarse setting relative to drip.
When finished grinding, the coffee will be of similar size to very coarse sand.
BEFORE STARTING KEEP THE FOLLOWING NOTES IN MIND-
1. Measure the coffee carefully as the amount of coffee relative to water volume will affect the strength of the brew.
2. A good starting point is 2 tablespoons of coffee for every 6 to 8 fluid ounces (1/3 to 1 cup) of water, then you can adjust to your personal preference.
3. The ratio is important for good flavor extraction; if the resulting strength is too much for your taste, you can add hot water or milk to your cup to adjust.
4. You’ll need to be ready to remove the water from the heat source as soon as it’s brought to a boil, then pour it into your French press.
5. The boiling point of water is 212F and by using water just off the boil, you are able to get the water to the perfect brewing temperature of 200 to 204F.
HERE WE GO:
Ingredients:
2 tablespoons coarsely ground coffee
¾ cup to 1 cup of spring water or Kangen water
Instruction:
1. Bring fresh water to a boil.
2. As it is heating, measure your ground coffee and add it to your French press.
3. As soon as the water comes to a boil, remove it from the heat source.
4. Then add some of this water to the French press, just enough to wet the grounds.
5. Use a spoon or gently swirl the ground coffee to be sure all of it is moistened.
6. Don’t agitate the mix much.
7. Give the coffee a moment to bloom if the beans are very fresh.
8. Then add the rest of the measure of hot water.
9. Fit the plunger to the pot and press it just enough to keep all of your ground beans immersed.
Coffee floats, so be sure to push the plunger gently because the floating coffee might try to rise above it.
For best result, time how long the coffee is in contact with the water.
Four minutes is generally accepted.
10. Pour your perfect cup of French press coffee.
11. Add cream and sweetener as desired (Dan and I take ours black for its healthier for you).
12. ENJOY.
