Today we will continue the steps to achieve a balanced life.
The fifth step that Dan and I will explore right now is to cultivate work-life balance.

Baked Stuffed Artichokes
This classic Italian-inspired appetizer brings together the earthy flavors of artichokes with a savory, herb-infused stuffing.
Originating from Sicilian and Neapolitan traditions, stuffed artichokes are a beloved family dish often enjoyed with a side of marinara sauce or melted butter.
This version is rich and indulgent, making it perfect for a special gathering.
Four whole artichokes
1 tbsp fresh squeezed lemon juice
2 tbsp extra virgin olive oil
Five garlic cloves, grated or pressed
1/2 cup diced shallots
1/2 cup dry white wine
2 1/2 tbsp fresh squeezed lemon juice
1/2 cup of chicken broth
Two cups of plain breadcrumbs
1/2 cup fresh parsley
1 tbsp fresh thyme leaves
1/2 cup finely grated parmesan cheese
4 tbsp melted butter
Directions:
1. Bring a large pot of water with lemon juice to boil.
Preheat oven to 375°F.
2. Prepare artichokes by trimming stems, cutting tops, and snipping leaf tips.
3. Boil artichokes for 15–20 minutes until they soften.
4. In a pan, heat olive oil over medium heat.
Sauté shallots and garlic for 3 minutes.
5. Add white wine, reduce by half, then stir in lemon juice and chicken broth.
Simmer for 3 minutes.
6. Stir in breadcrumbs, parsley, thyme, and parmesan.
Remove from heat.
7. Arrange artichokes in a baking dish, gently pull apart leaves, and stuff with the mixture.
8. Sprinkle with parmesan and drizzle with melted butter.
9. Bake for 15 minutes until golden brown.
Serve with additional butter.
