Its hump day, half way through the week. Dan and I have been practicing inner peace and have been sharing with you through blogging.



The Dalai Lama says it best, when we have inner peace; we can be at peace with those around us.


When our community is in a state of peace, it can share that peace with neighboring communities.

Inner peace means; being able to stop worrying, living a stress-free life, a calm and poised mind, not taking things too personally and not getting agitated in the various situations of daily life.

Yesterday here in Virginia, the weather was 74 degrees, nice day for a walk outside and stopping to see the spring flowers. Since Dan parked the car in a mall parking lot to wash and clean the tires, we decided to just walk around there. If you have the opportunity to go outside for a walk around, look up to the sky and feel the beauty that surrounds you. If not, you can always “Walk at Home”.

Are you ready for another recipe with everyday ingredients into foods and remedies that heal! Another recipe that uses pepper.



PEPPERY BORSCHT


Borscht is a traditional beet soup from Eastern Europe. This is a perfect fall and winter soup as its dense, warming and filled with winter vegetables. Dan and I like soup any time of the year. The pepper gives the hearty soup an earthy, spicy taste.


Ingredients:

2 tablespoons butter

1 ½ cups chopped onions

1 pound ground beef – grass fed

4 garlic cloves, minced

1 teaspoon caraway seeds

2 teaspoons salt or to taste

2 tablespoons freshly grounded black pepper

2 bay leaves

1 celery stalk, chopped

1 large carrot, sliced

3 cups coarsely chopped purple cabbage

2 cups cubed beets

1 ½ cups cubed potatoes

1 cup chopped fresh shitake mushrooms

6 cups chicken or vegetable stock

1 tablespoon balsamic vinegar

1 cup chopped greens, including stems if desired

1 tablespoon of honey

1 cup tomato puree

Green onions for garnish

Sour cream optical



Instructions:

1. Heat the butter in a large pot over a medium heat.

2. Add the onions and sauté until they are translucent.

3. Then add the ground beef to the pan and cook until browned.

4. Add the garlic, caraway seeds, salt, pepper and bay leaves – sauté for one minute.

5. Then add the celery, carrot, cabbage, beets, potatoes, mushrooms and stock.

6. Bring the mixer to a boil, then lower the heat and simmer until all the vegetables are tender. (around 30 minutes)

7. Stir the balsamic vinegar, beet greens, honey and tomato puree.

8. Cover and continue to simmer for 5 more minutes.

9. Remove the bay leaves before serving.

10. Garnish with the green onions and serve with a dollop of sour cream.


Before I end, on the front of the website that is connected to this blog https://www.thejourneytogoodhealth.com , I have a company named Vital Choice. This is a wild organic fish company that Dan and I get our salmon and other wild fish. The reason why I’m mentioning this is, last night Dan was craving fish and chips. So, we went to our local food co-op and purchased gluten free bread crumps and potatoes. Look what I created – yummy.



Until Thursday, remember meditation gives you an opportunity to come to know your invisible self. It allows you to empty yourself of the endless hyperactivity of your mind, and to attain calmness. It teaches you to be peaceful, to remove stress, to receive answers where confusion previously reigned.
